Healthy Chili Recipe | Beans & Veggies [RECIPE]

Ck and I made an amazing Healthy Chili Recipe on Sunday so we could have it for lunches for a few days. IT WAS AMAZING! Not only in taste, but knowing that it was packed with so much goodness made it taste even better! Now you can pretty much use any veggies or beans you desire, I always say the more colours the better. After we let it stew for a while over the stove, we added Hemp Hearts and   Chia Seeds  to it. Aside from the little crunchy texture these two ingredients add, they are also packed with protein and nutrients that our bodies need, but that’s a whole other post.

Ingredients we put in our Healthy Chili Recipe:

  • 2 Carrots
  • 4 stalks Celery
  • 1 Onions
  • Parsley
  • 1 Leek stem
  • handful of Green beans
  • Handful Tomatoes
  • 12-14 Okra
  • Kidney Beans
  • Lentils 
  • Chick Peas
  • 2 Cups Tomato Sauce
  • Crushed Tomatoes 
  • Lots of Garlic
  • Pepper/Cayenne/Chili Flakes
  • Hemp Hearts
  • Chia Seeds

We love going to the local Market for our veggies, besides the great atmosphere and fruit falling everywhere..its cool to support your local farmers.  Oh and the prices are so much more reasonable. Definitely worth the separate trip on your grocery run!

We made a big pot and a half as you can see in the picture. So I even packaged some up and put it in the freezer for next week. Ok, something to remember when your cooking hot foods, always remember to cool it! So make an  “ice bath”  your kitchen sink with cold water and ice cubes. Then once your food is done cooking you want to cool it quickly to keep bacteria and toxins from growing. So set the pots in the ice bath and every time you walk by give it a mix to let some stem out and help cool it down fast. Your goal is to bring it down in temperature as fast as you can. Now if your in a rush and don’t have time to bath your food then put it in the fridge with the cover slightly open. DO NOT LEAVE IT ON THE COUNTER OR STOVE TOP TO COOL!! OK.. Now Im sure my mother didn’t do this as I was growing up and I am still alive to type this blog..lol but it is a safe way to prevent that so called “Stomach flu”. Which I believe is usually always food poisoning. Yes you can boil bacteria out when you re-heat the food but once those toxins are soaked in there you are not getting rid of the little buggers. So practice safe food handling.
